Over time, I guess you could say I’ve become low-key addicted to high-quality pastries. Mrs. London’s has always held a special place in my heart as my go-to spot when I need a little pick-me-up, as well as where I spend my money when I want to impress family or friends staying with us (because you better believe I’m not attempting to bake like that.)
Anyway, when I heard about a new bakery opening up in Wilton this past spring, I naturally was a bit reluctant. With promises of buttery croissants, sourdough bread, and savory danishes, I really didn’t know what to expect in terms of quality.
But as you may have seen in my Instagram post, I was floored by what I tasted.
That right there is an aged cheddar and leek danish that I basically haven’t stopped thinking about since I tried it on April 28. Yes – it’s been almost two months and I’m still chasing the emotions I felt while eating this.
DO YOU SEE THOSE LAYERS?!?!?
Flaky. Salty. Buttery. Light. Airy. Umami. STUNNING. I truly cannot string together a full sentence to describe this, but it was like top 5 best things I’ve ever eaten and I’m not exaggerating.
While the savory danishes change every week based on seasonal ingredients (sorry you prob won’t see this specific one for a while), there are some staples that they have every Thursday-Sunday when they’re open.
One of these “classic” items is the morning bun.
The employee described it as a cinnamon bun without the frosting, but it’s so much more. It’s flaky (clearly one of my favorite words in this article), it’s warm and a little spicy from the cinnamon, but it’s still sweet and light! All the winning flavor profiles in a pastry if you ask me.
Since my first visit to Bakery Suzanne, I have also tried the pain au chocolate, the croissant, and the pain au raisins – all fantastic. If you think I’m gonna stop there, you’re wrong. I’m going to keep going back until I can report on all of the pastries and baked goods because, you know, research.
Do NOT, I repeat DO NOT sleep on this absolute gem that’s recently joined the Saratoga (or Wilton) scene.
Some additional details:
Location – 4284 rt 50, Saratoga Springs, NY 12866
Hours – Thursday to Sunday, 8am-2pm (while they open at 8, MOST everything isn’t available in the case until 9am)

I discovered BS right after its opening and agree with every word you wrote. My only worry is will he be able to keep up with demand as word spreads?
