Have you ever spent days thinking about charger plates? You know, those decorative plates that sit underneath real plates? I’m sorry to admit that recently I have.
Wedding planning has been consuming me in all the wrong ways, but I’m here to tell you that I’m OKAY.
To save money, we’ve been eating at home A LOT and my breakfast most mornings consist of oatmeal… and oatmeal. Sometimes I’ll treat myself to a breakfast burrito, but 9/10 it’s rolled oats.
While I’m pretty good at sticking to a routine and not getting totally sick of having the same thing every day, when someone mentions brunch to me, I JUMP at the opportunity.
I’ve talked in the past about having some tried and true menu items that I know I’ll love every time I go back to a restaurant, and the No Huevos Rancheros at The Mercantile is another one of those for me.
This little beauty is a veggie scramble of butternut squash, black beans, spinach, quinoa, caramelized onions & soy chorizo. It’s topped with avocado mash, salsa & toast.
Yupp, it’s healthy.
Yupp, it’s satisfying.
And… YUPP, it also happens to be vegan.
Whole grains, beans, and vegetables all combined together is like my perfect dream team, and this dish delivers all three. It’s also a little spicy, which is also a win for me and my tastebuds.
Another great option is the Nicoise Salad (which I love to say out loud to feel fancy.)
This salad is loaded with the goods: olives, hard-boiled eggs, potatoes, green beans, tomatoes, quinoa and of course… perfectly cooked salmon.
I’m very into a brunch salad, especially when it’s fully loaded like this one. It gives you that feeling of a hearty meal while also letting you take on the day instead of needing to head home for a nap after eating.
Regardless of whether you like a light brunch or a comfort-heavy one (helloooo fried chicken sandwich!), The Mercantile offers a wide variety of menu items for all brunch-goers!
