Comfort food does NOT necessarily mean it has to be unhealthy and full of cheese. Don’t get me wrong, there’s no food I’d rather eat while crying than pizza with extra cheese… but every once in a while finding a lighter version of comfort food that gets in those essential nutrients is a good thing.
Enter 9 Miles East. At this point, if you haven’t heard of or seen 9 Miles East cruising around town, it’s time you check them out.
Besides their amazing pizza, they also have several different “go boxes” featuring healthy meal options with lots of veggies from their own farm for anyone on the go.
I got myself a container of their quinoa and veggie mixture, which included carrots, zucchini, black beans and beets, and decided to spruce it up and turn it into a full on dinner.
While it was great on its own, I’m getting back into my workout regimen and I needed to add some protein to this meal. I had some ground turkey in the fridge (shout out to Misty Knoll Farms – best turkey evaaaa), so I decided to make a play on fried rice.
I cooked up the turkey, added some fresh garlic and green onions, threw in the quinoa mixture and added broccoli. A little soy sauce here, some red pepper flakes there, a drizzle of sriracha and voila! Quinoa fried rice without any of the guilt. Even though it’s just myself and my boo at home, there was definitely enough food to feed 4 people. YAY for leftovers.
